As part of our critical control procedures, every batch of incoming tuna undergoes histamine testing to ensure safety and regulatory compliance. Histamine levels are carefully analyzed in our laboratory using methods aligned with FDA standards. This testing helps us verify the freshness of the raw material and ensures that only high-quality tuna moves forward in the production process.
Our laboratory also performs microbiological and chemical testing, including Aerobic Plate Count (APC) to assess general bacterial levels, E. coli detection for hygiene monitoring, and advanced DNA-based analysis for Salmonella to ensure rapid and accurate pathogen identification. In addition to analytical testing, Nusatuna emphasizes sensory evaluation as part of our quality assurance process. Our trained sensory team undergoes annual training in accordance with FDA standards, ensuring they can detect subtle changes in product quality, texture, and freshness.
